The History

Milani therefore became a true “Master Roaster”, one of the most attentive and skilled of his time. This endless passion inevitably involved even the youngest son, Pierluigi. Celestino taught him the secrets of roasting and the recipes of the blends: a precious treasure that he has jealously kept to this day.

In the following years, Pierluigi Milani continued to instill in the company situated in Lipomo the extreme attention to the production process that his father had taught him.

In the historic centre of Como, it was impossible to resist the charming aroma of coffee coming from that door. It was 1937, and the door was that of the Celestino Milani’s workshop, where there was a small coffee bar with a discontinuous roaster, producing high-quality coffee. Not far from picturesque Lake Como, the Milani coffee bar attracted local residents, who soon began to go there on a daily basis for a pleasant break, but it also became a popular destination for tourists passing by, seeking a good Italian-style coffee.

Its coffee soon became a landmark throughout the city and beyond. The reason for this well-deserved success? Simply Celestino’s endless passion. This passion is expressed through the accurate selection of the finest varieties of coffee, imported directly from its place of origin, paying meticulous attention to roasting and, of course, to skilful blending.

The seven Notes

STORY

The story is family, wisdom and culture of a profession that over the years has been evolving and developing. No school or any other learning methodology can compete with the years spent on it and the transition from father to son for creating such a unique and special roasting style.

HEART

The heart is pure love. Having the product at the heart, following it, cuddling it, getting passionate by seeing it grow. A passion that arises spontaneously in people and that is not for sale: either you have it or you don’t. The heart that Milani has always had for coffee.

STRENGTH

We do believe that our strength as well as our determination can be found in our coffee. It is the energy that has been used in all these past years by Milani to reach certain goals and it is the one that will serve to continue on this path in the coming years. The courage to go ahead.

SOUL

The soul of the coffee is its essence, something that goes beyond the grain. It is the emotion it evokes, its enrapturing aroma, it is that element which transforms the coffee-cup into a particular experience. We have always wanted to respect the most profound soul of coffee.

IDEAS

We have never been afraid of new ideas. In fact we welcome them and often sought them. Because the ideas can change the world. Ideas to follow and sometimes to anticipate our customers’ taste, to possess new technologies by respecting the past and choosing the best of the future.

HARMONY

Harmony is all in a blend: it is the perfect combination of strength and sofiness, as well as balance in life. Balancing is a difficult art that Milani was able to learn and to administer wisely. In order to be in harmony with its customers at all times.

CHARACTER

A coffee with character has a distinct personality that makes it stand out from the others. Each Milani blend has its own different character. It is also appreciated for that. Because coffee is like a unique and irreplaceable friend, who can give you the right thing at the right time.

The production stages

Green coffee, arriving from exotic and distant lands in jute bags, is ready for its wonderful and magical metamorphosis.

Selection

the first essential activity.

A single defective coffee bean can jeopardise the end result of a coffee, which is why Milani carefully chooses the right coffee beans to provide a higher quality product and meticulously examines each batch of green coffee.

Blending

a symphony of aromas.

Blending is an art that Milani practices with dedication and craftsmanship in order to highlight the virtue and added value of coffee. The blends can be made with coffee of various origins and quality and, when consisting of Arabica quality, they are generally sweeter and more aromatic compared to those consisting of Arabica and Robusta qualities, which are more full-bodied and have a stronger taste.

Roasting

a buming secret.

Coffee roasting is a crucial stage of coffee manufacturing but it is also the most intimate. It allows the characteristic aroma and body of each coffee to develop, and Milani’s distinctive traits, i.e. expertise, attention and pursuit of perfection, to be expressed at the highest level. This is why the eye, mind and heart of the “Master Roaster” play a key role.

Packaging

the finishing touch of a signature coffee.

After a perfect roasting, the product needs to be packed immediately, so that the exotic aromas of coffee remain intact and unaltered until consumption.

THE HIGH QUALITY OF MILANI'S COFFEE IS NOT AN OPINION.

Thanks to a specialised attention to quality control, the Milani Quality Management System is one of the first in the industry to have been certified according to the UNI EN ISO 9001:2008 standard.

Milani’s best blends have obtained the ‘Certified Italian Espresso certification’, according to the strict provisions for production set out in the technical specifications no. 0008 developed by the Italian Espresso National Institute, of which Milani was a promoter and founding member.

Milani’s Organic blend is made with coffee grown without the use of chemicals and pesticides and is “good” not only because it is pleasing to the palate but also because it is “good” for the whole body.
