This is a risotto rice mousse cake topped with elegant skirt of the princess made with white chocolate and red raspberries. This is a complicated and skillful process to transform the Italian risotto to silky mousse. Alongside with Yuzu jam and shortcrust, this cake is a combination of sweet and glutinous, soft and crunchy.
